Swiss Buttercream Frosting Recipe

**NOTE*** I make a fuss about the egg whites in this and I really didn’t have to. All you have to do is make sure your egg whites get to 140 F over the hot water and they will be safe. I found the frosting recipe here: www.australiaentertains.com.au This website has different recipe sizes for different size cakes. The recipe I show in the video is the following: 1/2 cup sugar 2 large egg whites 3/4 cup butter softened 1/2 tsp vanilla extract It was enough to generously frost about 6-8 cupcakes (depending on the cupcake size). Place a big metal bowl over a pot of simmering water. Immediately add the sugar followed by the egg whites. Whisk together over the simmering water until you can’t feel the sugar grains when you rub the mixture between your fingers. Transfer mixture into a stand mixer if desired or leave it in the bowl and and whip with an electric hand mixer until it turns white and about doubles in volume. Blend in the vanilla. Add the butter in about 3 additions or so and continue to whip until the mixture gets thick and you think that it is thick enough to decorate with. This buttercream does not get a crust on the surface and it stays fluffy even after sitting overnight (does not flatten). Because of the egg whites, you would need to refrigerate the decorated cakes/cupcakes after they are frosted. This frosting is light, creamy and wonderful. Betty’s Buttercream Frosting Recipe

In this video, Betty demonstrates how to make her easy and fantastic Buttercream Frosting. This will be demonstrated as a frosting for cookies, but it is appropriate for cakes, cupcakes, cookies, muffins, doughnuts, and just about anything you like spread with a sweet and delicious topping! Ingredients: 16 oz. package confectioners sugar ½ cup butter, softened 3 tablespoons milk 2 teaspoons vanilla extract Use an electric mixer on low speed to beat 16 oz. confectioners sugar, ½ cup butter, 3 tablespoons milk, and 2 teaspoons vanilla until well blended and smooth. If the frosting is too thick, add a small amount of milk. If it is not thick enough, add more confectioners sugar. When it is of spreading consistency, it is ready to use. You may refrigerate it until later. When you remove it from the refrigerator, let it stand until it reaches room temperature for easiest handling. This recipe will make approximately 2 ½ cups of frosting.

And while that’s all good and dandy, what makes a cupcake fantastic is of course, the frosting! This is a Meringue-based frosting meaning it’s made out of eggwhites. There are several different ways of making buttercream and while some may find it tricky, it’s actually wonderfully easy! I would want to say it’s a piece of cake, but…well…Oh what the hell.
